What to make for dinner?

I always have a hard time figuring out what to make for dinner! It has to please everyone and needs to be somewhat healthy! I'm not one to make something more than once and I'm not creative in the Kitchen! So the other night I pulled out
"RECIPES BY GOD" cook book,
& thought I would try the "TURKEY ROLL"!

Oh My is was soo easy to make and Kanaan had 4 helpings! We ate the whole thing!
I thought I would share with you the receipe:

Turkey Roll

1 1/2 pounds ground turkey
1 teaspoon sea salt
1/4 teaspoon pepper

Filling
1 1/2 cups frozen corn
1 egg
1/4 cup minced fresh parsley( I used Epicure)
1/2 teaspoon sea salt
1/8 teaspoon pepper

Mix turkey with sea salt and pepper. Mix filling ingredients in a separate bowl.
Place turkey mixture on a piece of heavy-duty foil and press with hands into a 12inch x 10 inch rectangle. Spoon the filling over the turkey mixture, with one inch of the edge. Roll up ( jellyroll style), starting with the short side and peeling foil away while rolling. Seal seams and ends. Place on greased 13 inch x 9 inch x 2 inch baking pan. Bake uncovered at 350 for 1 hour.


I placed mine in a cassorole dish and added sweet potaotes and yams with some 3 onion dip( epicure) sprinkled on top! It took more like 1.5hrs to cook!

It has been a joke in our house around the dinner table regarding if dinner was good, great or awsome! Chris well always comment on other peoples dinner that it is "Awsome" but my dinners are never up to par until tonight!

Tonights dinner was " AWSOME" according to Chris:

Chicken Cordon Bleu

4 servings
Ingredients
1 lb (450 g) chicken breast tenders
2 tsp (10 ml) VE Poultry Seasoning
VE Sea Salt - Grinder, to taste
VE Black Pepper - Grinder, to taste
1/4 lb (125 g) cooked sliced ham, cut into small pieces
1/2 cup (125 ml) bread crumbs
1 Tbsp (15 ml) VE Dijon Tarragon Dip Mix
1/3 cup (80 ml) shredded Swiss cheese

Instructions
1. Preheat oven to 350° F (175° C).
2. Season chicken with VE Poultry Seasoning and VE Sea Salt and VE Pepper. Arrange in bottom of shallow casserole dish.
3. Sprinkle pieces of ham over chicken and combine bread crumbs with VE Dijon Tarragon Dip Mix or VE Lemon Dilly Dip Mix.
4. Top chicken with bread crumb mixture and shredded Swiss cheese. Bake in oven for approximately 35 minutes, or until chicken is fully cooked and cheese pleasantly melted.


Per Serving: Calories 220, Fat 8 g (Saturated 3.5 g, Trans 0 g), Cholesterol 90 mg, Sodium 560 mg, Carbohydrate 5 g (Fibre 1 g, Sugars 0 g), Protein 31 g.

Mother's Day!

If you would of asked me about mothers day 4 years ago I would of said it was all about me and having a day to myself.

This year was the most amazing Mother's Day for me for many reasons:

The first being the fact that I don't have a mother to spend the day with!
(my mom died 3yrs ago, honestly feels like it was just this last News Years that I lost her). I was beside myself this year for Mothers Day , I guess it will never go away but you would think it would get easier not having her here for me anymore but it hasn't and it doesn't) I need her on a daily basis and think about her always!

So anyways this year I needed to do something for her and I didn't want to bring flowers to her grave site because she would be mad, so I got out her Obit. and read it and this is what she wrote for herself:
" in lieu of flowers send a bouquet to someone who can enjoy it while living or do something kind for someone who needs it or whisper a word of encouragement and love to our young people adn fellow - men in my memory"
So I loaded up Mya and put on a movie for her and we went and bought flowers and spent the evening delievering them to Mom's that are in our lives!

I received such wonderfull responses from the justure and I wish to thank everyone for their kind words. I didn't do it for attention I did it for HANNAH MARIE CARUSO.

PAY-IT-FORWARD ONE DAY!

Second Reason :
Woke up in the morning and little cutie Mya gave me a massage in bed, chris brought me coffee( I don't drink coffee anymore but I did so he won't feel bad) , the kids gave me the greatest cards/gifts made in school and Chris gave me a GSP and said this should stop some of our fights when traveling!

Chris topped it off with Making my favorite "CREPES"
(good thing I bought milk and eggs the night before)

Went to Church and than....

Third Reason:

Chris and Three guys planned,purchased,cooked,served and entertained the kids for all of sunday afternoon at our house. It was so awsome to spend it with everyone!

Turkey Feta Burgers

I had the pleasure of making dinner for a girlfriend the other day who has just had her 5th baby.
I brought her TURKEY FETA BURGERS and appearently it was a hit in there house so I thought I would share the receipe. My kids just love them, and they are so simple to make and so much better for you than a regular burger.

TURKEY FETA BURGERS:
(my version)
I don't normally measure so this is approx.

Two packages of ground turkey
1/2 -1 cup of feta
1 cup of fresh spinach chopped up into fine pieces
(the kids can see it but can't taste it)
2 Tbsp of Epicure Pesto(you can also use oregano)

Mix all ingredients together and form into a patty.
Lightly oil a pan with coconut oil or grapeseed oil
and cook on med.
Cook patties slowly to ensure that
they are fully cooked through
( turkey is not very fatty and
will burn easly on a higher setting)
Turn them over regularly.

Should make 6-8 patties

I'm so so sorry!

So I finally got a new laptop the other day and I just had some time to check out my blog.
All I have to say is that I'm so so sorry!
How annoying is all that music that you have had to listen to this past year.
My old laptop lost it's ablility to play music about a year ago so ever time I logged into my blog I had no idea that the music was playing over and over again!

So I couldn't figure out how to turn off the music, so I just ended up deleting the rockyou slide shows.

Ok So it has been a month since my last sip of coffee!
Was it hard? Yes!
Would I like a cup of coffee? no

I have no intentions of having a cup but I do have to tell you that Timmy's coffee does temp. me a lot. I can see myself having a little bit of a struggle when camping starts. There is nothing like a hot cup of coffee to wake you up after a crappy night of sleep!

I shall pass through this world but once. Any good therefore, that I can do, or any kindness that I can show to any human being let me do it now. Let me not defer or neglect, for I shall not pass this way again.
